Ingredients:

2 spring onions 1 clove garlic 2 bunches of fresh herbs {parsley, chives, also forgotten kitchen herbs} 1 pear 1 large cucumber 1 zucchini {medium size} 1 fist fresh basil 200 g natural yoghurt 4 tbsp olive oil Juice 1 lemon 2 heaped tablespoons breadcrumbs 1 tsp soup seasoning Salt pepper Optional: some chili To top it off: 50 g natural yoghurt Freshly chopped herbs 4 tbsp olive oil Baking peas

There is one thing that should never be missing from a soup, even a cool summer soup, and that is bread! Crispy on the outside, airy on the inside, great for dipping. Today, fine spelt bread - super practical as a ready-made bread mix from Bake Affair. Baking your own bread has never been so easy. With the baking mix from Stöber, you don't need much more than a little water. Because all the other ingredients you need for a super fine homemade bread are already in there: ingredients 100% from Austria, vegan, palm oil-free and sugar-free. Especially in summer, when we prefer to spend our time on the terrace rather than in the kitchen, we love to use the wide selection of wonderful baking mixes . 1. Prepare the spelt bread according to the instructions on the back of the tin. 2. Wash, clean and chop the spring onions. Peel and chop the garlic. Wash, clean and roughly chop the herbs. 3. Wash the pear and remove the core. Peel the cucumber and zucchini and cut into bite-sized pieces. 4. Place the remaining ingredients in a blender and puree until smooth. 5. Then season with soup spices, salt and pepper. Optionally, add chili. 6. Pour the herb gazpacho into bowls and serve garnished with yoghurt, fresh herbs, olive oil and baking peas.
