3. Separate 1 egg and add the yolk to the baking mixture in the bowl.
4. Knead the dough by hand, with a food processor or with a Thermomix for about 2-3 minutes and wrap it in cling film. Then chill for about 60 minutes (or overnight).
5. Preheat the oven to 170°C (top/bottom heat) and line a baking tray with baking paper.
6. Sprinkle the work surface and the dough with flour and roll out the dough to a thickness of about 5 mm. Cut out the cookies using our animal cookie cutters and place them on the baking tray.
7. Bake the blueberry cookies on the middle rack for about 10-15 minutes until they are lightly browned. Then let them cool and remove from the baking sheet.
8. Sprinkle the finished blueberry cookies with icing sugar, decorate with blueberries or fill with jam as desired.
