2. Classic version : Heat 60 g butter in a saucepan or in the microwave for 30 seconds until the butter dissolves. Mix together with the milk or buttermilk (see milk/buttermilk line in the can) and the 3 eggs using a whisk, food processor or Thermomix and leave to swell for about 5 minutes.
Vegan version:Add 320 ml vegan milk (see milk line in the can) and 1 tablespoon neutral oil or coconut fat and mix for 1 minute with the food processor, hand mixer or Thermomix and let it swell for about 5 minutes.
3. Then add 30g of baking cocoa and 1.5 teaspoons of cinnamon to the dough and stir with a whisk until it has a nice brownish color.
4. Preheat the waffle iron and brush with butter or vegetable fat or spray with baking spray.
5. Bake the waffles one at a time for about 4-5 minutes, depending on the desired degree of crispiness.
6. Sprinkle the brownie waffles with icing sugar and serve garnished with apple and pear pieces, some honey/elderflower syrup, cinnamon and walnuts.
