Pretzel rolls

For the organic pretzel rolls
1 organic baking mix organic pretzels
215 ml water
Classic: 1 egg
Vegan: 2 tbsp water

For the lye:
2l water

For sprinkling:
coarse salt, sesame or poppy seeds

Zubereitung

With the organic pretzel baking mix you can bake delicious pretzels and crispy pretzels in no time. All you have to do is add a little water and you've conjured up delicious pretzels for breakfast or a snack!

1. Open the freshness seal of the organic baking mix for organic pretzels and put the bag with the baking soda aside.

2. Put the baking mix in a large bowl, add 215 ml of lukewarm water (see water line in the can) and knead the dough by hand, with a food processor or with the Thermomix for about 3 minutes.

3. Cover the dough in the bowl and let it rest at room temperature (approx. 24 °C) for approx. 30 – 45 minutes.

4. In the meantime, put 2 liters of water and the bag of baking soda in a large pot and heat. The water should not boil.

5. Preheat the oven (top and bottom heat 190 °C).

6. Place the dough pieces into the water one at a time for about 30 seconds, turning them once. Dab the pastries with a kitchen roll, separate the egg and brush with egg white or water. Sprinkle withseeds and kernels as desired.

7. Bake at 190 °C for about 25 minutes. Remove from the baking tray and allow to cool for 10 minutes.
