Baking instructions for organic spelt bread
- Open the freshness seal, put the baking mix in a bowl, add 220 ml of lukewarm water (see water line in the can) and knead the dough by hand, with the food processor or with the Thermomix for approx. 3 minutes.
- Cover the dough and let it rest in a warm place (approx. 24 °C) for approx. 30 minutes.
- Place the dough on a floured work surface and knead briefly.
- Spelt rolls: Form the dough into a roll and cut off 3 pieces (200 g each) using a dough scraper. Shape the individual pieces into the desired shape. Place on a baking tray lined with baking paper.
Spelt bread: Using a dough scraper, fold the dough from the edges to the middle, shape it into a round shape and place it with the end facing down in a proving basket or on a baking tray lined with baking paper. - Dust the dough with a little flour and cover it and leave it to rise in a warm place (approx. 24 °C) for approx. 1-2 hours. Preheat the oven to 220 °C (for rolls), 230 °C (for bread) or 250 °C (for cast iron pot - including pot).
- Rolls: Bake at 220 °C hot air for approx. 12 minutes.
Bread: Turn the dough out onto a baking tray lined with baking paper and bake at 230 °C top and bottom heat for 10 minutes, then reduce the temperature to 190 °C and bake for a further 20 minutes. - Allow the bread or rolls to cool on a rack for about 10 minutes and then enjoy.

Tips
Since the dough is a bit sticky, we recommend that you flour your hands and the work surface well when shaping the bread and that you shape the bread quickly.
To make the bread crispier, moisten the baking paper with water! Brush the rolls with water and sprinkle with sesame seeds, sunflower seeds, pumpkin seeds or oat flakes, depending on your taste.
As soon as the bottom of the bread turns brown, the pastry is ready.
