The history of emmer grain
Together with barley, emmer was the main grain at that time and it remained that way until the Bronze Age, especially in Central Europe. Emmer is considered the original form of wheat and is therefore affectionately called "Stone Age wheat".
Since newer types of grain are significantly more productive in terms of the production process, emmer flour was increasingly forgotten. At that time, quantity counted more than quality. However, people have long since recognized how valuable this type of flour is. The cultivation of this extremely robust grain plant is currently booming in Austria and Germany and the good old types of grain are fortunately on the rise again.
